Guatemala, La Unión
Summary
From the La Unión estate in San Pedro Necta, Huehuetenango, Guatemala, this Pacamara lot is grown at 1,650–1,850 MASL under the region's cool climate and plentiful rainfall. Third-generation producer Carlos Rivas oversaw hand-sorting, pulping, double fermentation, washing and 10–15 day drying on raised beds at the onsite wet mill. The exacting washed process yields a clean cup with lifted acidity and jammy mango sweetness, with notes of cherry, mango and floral botanicals.
