Summary
Yellow Catucai coffee from Fazenda Samambaia, owned by the Cambraia family since the 19th century, located in Santo Antonio, Brazil. This is the roaster's first direct trade relationship. The coffee is processed using 48-hour aerobic fermentation: ripe coffee cherries are hand-picked and spread in thick stacks (30-40cm) on patios or raised beds, slowing the drying rate and increasing fermentation until the temperature reaches approximately 38°C. Tasting notes include tropical fruits, red wine, and milk chocolate. Grown at 1100 masl.
