
Peru Amazonas Washed Espresso
Summary
A washed Grade 1 coffee from the Amazonas region of Peru, produced by farmers associated with Valley Coffee Trading. Made from Caturra and Bourbon varieties grown at 1200-1450 masl. Washed processing delivers a clean, balanced cup with soft chocolaty sweetness and notes of pomelo, brown sugar, almond and walnut. Recommended for espresso.

Grind: it should look like kitchen salt
- 1.Prepare cup, scale, and tamper.
- 2.Grind 18g of coffee.
- 3.Add coffee to portafilter and distribute it evenly.
- 4.Tamp it evenly/straight with tamper. It doesn't have to be very strong; if you feel the tamper is not going anymore down, that is enough.
- 5.Flush the grouphead.
- 6.Insert the portafilter and start the extraction.
- 7.Put cups under the spouts. If you use a traditional espresso cup (not bigger than 90ml of total volume), you should get not more than 1/3 of a cup.
There should be 60-70 ml of water going through coffee.
