Sheep & Raven is the Polish specialty coffee project of Agnieszka Rojewska—World Barista Champion 2018 and one of the most decorated baristas on the planet. Based in Mikołajów, the roastery sorts its beans into four playful categories: White Sheep for milk-friendly classics, Black Raven for bright pour-overs, White Raven for competition-grade complexity, and Black Sheep for wild experimental processing. Aga's showroom doubles as a teaching space where she runs brewing courses. The lineup ranges from everyday comfort coffees to rare geshas and funky naturals—all roasted with the precision you'd expect from someone who's competed and won at the highest level.
