Las Lajas - Finca Sabanilla (costa Rica) - Filterröstung
Summary
Filter roast from Finca Sabanilla in Costa Rica's Central Valley, grown at 1,400-1,600 m. Produced by Oscar and Francisca Chacón, third-generation farmers and pioneers of the Micromill Revolution, who process this Casiopea lot as a Yellow Honey: cherries are strictly sorted for full ripeness, pulped and dried on raised beds with frequent turning for a fast, even dry that preserves the mucilage's natural sweetness. Expect a clear, fruity-sweet cup with pecan nut, praline and raisin.
