Mexico- Cipres- Washed
Summary
Ciprés is a washed Mexican coffee from smallholder producers in the Tenejapa region of Chiapas, grown at elevations between 1,000 and 1,350 masl on volcanic soils. Varieties include Caturra, Typica, Costa Rica, and Marsellesa. The coffee undergoes overnight fermentation before being sun-dried on patios for 12 to 18 days. Named after Mexico's national tree, it represents the flavour profiles the origin is known for, with washed processing preserving clarity and regional character.
