A washed coffee from Las Etíopes farm in Jaén, Cajamarca, Peru, produced by Simon Brown and Merlith Cruz. The farm sits at 1,950-2,050 masl and grows Ethiopian heirloom varieties. The coffee undergoes a washed process with mosto fermentation using a Geisha-based natural starter inoculated with hops. Dried slowly for 15-20 days in a covered tent. Known for pronounced acidity and great body.
