A washed coffee from Thailand's Mae Chedi cooperative in Chiang Rai province, led by producer Watchara Yawirach in collaboration with Beanspire. Grown at 1,250 metres above sea level, this coffee features the Chiang Mai varietal (a Catimor hybrid cross of SL28, Caturra, and Híbrido de Timor). The washed processing yields a flavour profile of mince pie, caramel, candied citrus peel, with notes of brown sugar, sultanas, raisins, hazelnut, chocolate, and dried fruit. Roasted to a medium-dark level, it received a cupping score of 87/100.
