Summary
This coffee comes from the Guji region of Ethiopia, specifically Kercha, an area known for producing distinctive coffees. It has been processed using a wine process, an extended controlled fermentation method that builds intensity, sweetness and complexity. Cherries are fermented in sealed stainless steel tanks for 4-5 days, then dried on raised African beds for 15-18 days. Flavour notes include raspberry, floral, wine, ripe berries, red wine, tropical fruit and floral sweetness, with a syrupy body and juicy finish.
