KOKOSE is a natural-process coffee from Basha Bekele's farm in Kokose village, Bensa, Sidama, Ethiopia, grown at 2350-2580 masl. The lot comprises indigenous heirloom, JARC 74158 and 74112 varieties, delivering citrus zest, white blossom, nectarine, mango, and forest berries. Producer Basha Bekele has won the Ethiopia Cup of Excellence and Top of the Harvest. The coffee is dried slowly on raised beds.

- 0:00Pour 80 g water at 93°C. Wet all the grounds evenly. No dry spots.
- 0:40Pour 80 g water at 93°C. Builds sweetness and balance.
- 1:20Pour 80 g water at 85°C. Pour gently and let the brew finish naturally.
Minerals 40-80 ppm. Filter: SOLO/Hiflux. Three-pour classic recipe. Temperature drops to 85°C for the final pour.
