Costa Rica El Vapor
Summary
Costa Rica El Vapor comes from one of the highest-altitude farms in Costa Rica, in the Santa María de Dota area of the Tarrazú region, grown at 2000–2100 m. The farm, Alto El Vapor, is run by a woman continuing her grandfather's land and is known for fine-tuning processing methods. This lot was produced with an anaerobic natural process: cherries ferment in sealed, oxygen-free tanks for days before being dried in the sun, giving deeper, more intense fruit character. Variety Catuai. Notes of clove, red cranberry and red wine, with marked vinous acidity and a dense, almost syrupy body.
