Summary

Costa Rican filter roast from Los Santos, Tablón del Guarco, grown by Don Alexis Coffee at 1,750–2,000 masl. A Red and Yellow Catuai lot processed naturally with thermic fermentation: whole cherries are rolled in black plastic and fermented in a greenhouse or solar dryer at a steady 40–45°C, then sun-dried for roughly 30 days. The cup leads with red wine, deep and dry, followed by dark fruit — plum, blackberry — a streak of cocoa nibs and a pinch of nutmeg, with a silky body. Cupping score 89 SCA.
