Taste Of Harvest Winner - Thermal Shock Honey Shantawene
Summary
Ethiopian coffee from the Shantawene station, produced by Samson Zi and his team. Cherries are pulped with mucilage retained, then given a thermal shock treatment — briefly washed with hot water and quickly shifted to cold water — before drying in shade on raised African beds for 19-22 days. The cup shows boosted acidity and fruitiness with traditional honey process character: tart cranberries, purple florals and a potent candied sweetness when hot, shifting to yellow florals, meyer lemon and calamansi as it cools, with a structured, silky texture.
