Costa Rica Rivense Finca El Mango Honey
Summary
Costa Rica Rivense Finca El Mango Honey comes from Café Rivense del Chirripó, a family-owned micromill founded by Régulo Ureña and Isabel Rojas in 2005 in the Chirripó micro-region of southern Costa Rica's Brunca region. The Catuaí and Caturra lot is honey processed, pulped to preserve 70% of the mucilage, patio dried for 9 days, then mechanically dried and rested in parchment for two months. In the cup it shows a clean, rounded profile with molasses, blood orange and dried apricot, lively malic and tartaric acidity, and a silky medium-plus body leading to chocolate, caramel and stone fruit.
