Summary
Single origin coffee from Colombia, produced at El Vergel Estate farm in the Fresno region of Tolima by the Bayter family. Made from Red and Yellow Caturra varieties. Processed using the natural anaerobic method: cherries undergo 48-60 hours of anaerobic fermentation, dried in a marquesine to 30% humidity, then mechanically dried below 45°C, with a 45-day stabilization in GrainPro. Flavour notes include brandy, yellow plum, and banana bread, with a dense body and delicate citrus undertones. Suitable for both espresso and filter brewing.
