Summary
A specialty coffee from Peru, sourced from smallholder growers in the northern highlands of Cajamarca (Jaén area) at altitudes from 1700 to nearly 2000 meters. Grown from traditional varieties Caturra, Bourbon, Typica and Catuai. The lot is processed dry with a 96-hour anaerobic fermentation in sealed tanks, followed by 18 days of drying on covered African drying racks with controlled sun exposure. Flavour profile features plums, blackberries, cocoa nibs and a long red wine finish. Recommended for filter brewing (V60).
