This specialty coffee comes from Finca Villa Rubiela in Pitalito, Huila, Colombia, where producer Fernando Vargas, a third-generation coffee grower, cultivates the Pink Bourbon variety at around 1700 m above sea level. The honey processing involves hand-picking ripe cherries, density separation, 12 hours of controlled oxygen contact, 36 hours of dry aerobic fermentation, washing, and about 15 days of shade drying. The cup is sweet and fruity with notes of red fruits, mango, caramel, cinnamon, and chocolate, balanced by medium acidity and low bitterness.
