This Red Bourbon lot offers an intense, fruit-forward profile with notes of strawberry, berry jam and sweet cherry, balancing pronounced sweetness with high acidity and low bitterness. The coffee is processed as a Natural Anaerobic: ripe cherries are selected by water, anaerobically fermented for 36 hours, then fermented in a mucilage-based medium prepared from a previous batch, rinsed, heat-shocked, and dried for five days. Grown at 1750 meters above sea level and harvested in 2025.
