A collaboration between Jamison Savage, Sasa Sestic, and Elvin Siew, this coffee comes from Iris Estate in the Volcán region of Panama. Grown at 1,850–2,300 masl, it is a Geisha variety processed using CM Natural (carbonic maceration), a winemaking-inspired method involving fermentation in CO2-rich barrels. Tasting notes include orange, apricot, and honey. This lot was featured in the 2026 MOBC champion barista routine.
