Ethiopia Guji Tracon

Summary

This coffee comes from the Guji region in southern Ethiopia, grown by approximately 1,600 smallholder farmers. The coffee undergoes an anaerobic natural fermentation process where ripe cherries are sorted and sealed in an oxygen-free environment for four days. Grown at high altitudes of around 2,000 meters above sea level, the slow ripening develops complex sugars. The cup offers notes of dark berries, hazelnut, and whiskey.
