Summary
Consuelo Rubio Peralta and her family produce this washed Tabi variety coffee from the Cajamarca region of Peru, grown at 1,800 meters elevation. The coffee underwent a 24-hour water-immersion fermentation in the barrel followed by thorough washing, then dried on raised beds. Flavour notes include tangerine, kumquat, and orange with medium-heavy sweetness and citric acidity. The Tabi cultivar is a hybrid of Bourbon, Typica and Timor, released in 2002 and known for its disease resistance and sweet cup profile.
