Summary
A specialty coffee from the Atlantic Forest biome of Minas Gerais, Brazil, produced by Mió. The coffee features Yellow Catucaì variety grown at 900-1100m altitude and undergoes a Volcanic Fermentation (72h with 50% overripe cherries) using Saccharomyces cerevisiae yeast for controlled fermentation. Flavour notes include pear, plum and caramel with creamy body, delicate acidity and a lingering caramel-like finish. This is a collaboration with SLOP Magazine inspired by their Forest Issue.
