Costa Rica Finca Birri
Summary
Single-origin Costa Rican coffee from Finca Birri, grown in the West Valley near the Poás Volcano and processed at Don Sabino Micromill, run by Steven Vargas as the fourth generation of a family farming coffee in Costa Rica for over 80 years. This Catuai lot undergoes a double-process natural: hand-sorted whole cherries are sealed in anaerobic tanks for 48–70 hours, then sun-dried on raised beds with thermal shocks cycling between warm beds and cool dark storage. In the cup: yellow peach, sticky toffee and a velvety body.
