Mexiko Ki-saya
Summary
Mexiko Ki-Saya comes from the Chiapas region in southern Mexico, grown at 1,400 m in the Sierra Madre de Chiapas by smallholders of the Tenejapa community near San Cristóbal de las Casas, in the shade of native trees. The lot, sourced through Covoya Coffee, combines Caturra, Costa Rica, Marsellesa and Typica varieties. Washed processing: cherries are hand-picked, pulped, fermented 12–17 hours, washed and dried on small patios. The cup is very sweet and rounded, with toffifee, hazelnuts, chocolate and soft berry notes, suited to espresso and milk drinks.
