
Xadicho
Summary
Xadicho is a washed Ethiopian coffee from the Sidama region, Yirgalem zone. The lot is managed by Abate Kisho, a coffee producer and processor with over 20 years of experience, who operates a washing station in the Berra district. Local smallholder farmers, each cultivating less than 1 hectare with up to 1500 coffee shrubs, deliver their harvest. The cherries are hand-sorted, depulped, and spontaneously fermented for 36-48 hours using wild yeast and bacteria, then washed and dried on raised beds for 12-15 days. Grown at 2100m altitude using local indigenous varieties. Flavour notes include jasmine tea, orange blossom, and honey.
