Summary
Shale is a washed Ethiopian coffee from the Yirgacheffe region, Gedeo zone. It is produced by a group of approximately 1500 local smallholder farmers who deliver their cherries to the Shale washing station near Worka village. The coffee is grown at 2300 meters above sea level using local heirloom varieties. Processing includes density sorting by flotation, open-tank spontaneous fermentation, washing channels, and drying on raised beds for about 10 days, followed by hand sorting. Flavour notes include peach, lemongrass, and black tea.
