
Mundayo
Summary
Mundayo is an Ethiopian coffee from the Guji region, Nensebo district, grown at 2100 meters altitude. It is produced by approximately 750 smallholder farmers who deliver their harvest to the Mundayo community washing station, established in 2019 by Faysel Abdosh Yonis' company Testi Coffee. The coffee uses local heirloom varieties and undergoes a washed processing method with a 36-48 hour spontaneous fermentation using wild yeasts and bacteria, followed by washing, channel grading, and 12-15 days of drying on raised beds. Flavour notes include mandarin, lemongrass, and black tea.
