Las Mercedes
Summary
Yamith Cifuentes, based near the mountainous village of Alto Tablon in Huila's Suaza region, Colombia, produces this selectively harvested Gesha variety. The coffee undergoes wet processing with spontaneous fermentation: 10 hours on the cherry, depulping, then 30 hours of fermentation in tanks with mucilage, followed by 20 days of slow drying on raised beds. Flavour notes include nectarine, lemongrass, and bergamot. Recommended for filter brewing.
