
La Meseta
Summary
La Meseta is a specialty coffee from Colombia, produced by Jonatan Delgado in the Bruselas region of Huila at 1850 meters elevation. The coffee is of the Sidra variety. It undergoes a dry processing method with anaerobic fermentation: selectively picked cherries are sorted, then sealed in airtight plastic bags for 48 hours. The extracted coffee juice is collected and added back during a subsequent 72-hour fermentation in plastic containers. After fermentation, the cherries are slowly dried on shaded raised beds for approximately 40 days. The flavor profile includes ripe pineapple, strawberry, and osmanthus. Recommended for filter brewing.
