
La Esmeralda
Summary
La Esmeralda is a coffee from Colombia, produced by Alberto Calderón in the La Estrella village near Acevedo, Huila region at 1440 meters altitude. The farm spans 10 hectares with approximately 40,000 Caturron and Castillo arabica trees. The coffee undergoes a washed process with a mixed fermentation: after flotation sorting, the cherries are sealed in airtight plastic bags for 24 hours, then depulped and fermented in open tanks underwater for another 48 hours, followed by drying in a shaded polytunnel. The flavour profile features pumpkin, watermelon, and butter caramel notes.
