
El Limo
Summary
El Limo is a single-origin coffee from El Salvador, produced by José Enrique Gutierrez at his El Limo farm in the Apaneca Ilamatepec mountain range at 1200 meters elevation. The coffee is a Yellow Icatu variety (a hybrid of Red Icatu and Yellow Bourbon, containing robusta genetics). Processed using an anaerobic natural method: ripe cherries are hand-sorted, sealed in airtight bags for 68-72 hours of anaerobic fermentation, then spread on raised beds and sun-dried for 30-32 days. The cup profile offers notes of fig, plum, and dark chocolate. Suitable for both espresso and filter preparation.
