Summary
An experimental microlot from Brazil's Mogiana region, produced by Patricia Coelho (third-generation producer) at Fazenda Santo Antônio. Grown at 1,050–1,300 masl, this Mundo Novo variety undergoes a unique Volcanic Fermentation process where overripe cherries are piled into pyramid mounds, inoculated with yeast, and hand-rotated over several days for uniform multi-layered fermentation. The cup profile features rum and raisin, tropical fruits (mango), milk chocolate, and toasted almond, combining a rich traditional Brazilian body with complex vibrant notes.
