El Colibrí
Summary
El Colibrí is the dark roast of Café Tiko's Costa Rican green coffee Brumas del Zurquí, a microlot from Heredia in the Valle Central. Produced by fourth-generation producer Juan Ramón Alvarado Rodríguez and his family, who run a family beneficio where neighbouring farms deliver their cherry. The lot is the Villa Sarchí variety, processed naturally, grown at 1400–1800 m. With the longest roast, cacao and molasses appear beneath the fruit, with notes of spices, cooked cherry and cacao. Especially good with milk.
