Summary

A special new release from Gerson Mora and Villa Pastora, this is an Ombligón single varietal from Huila, Colombia, grown at 1800 MASL. It undergoes a 72-hour anaerobic ferment, then is inoculated with brewer's yeast and fermented for a further 120 hours before being depulped, soaked, and dried. This process intensifies tropical fruit notes, bringing forward syrupy and tart passion fruit, funky papaya, and floral orange blossom.
