Summary

Naturally processed Pacamara from Finca Himalaya in Apaneca, El Salvador, produced by Mauricio Salaverria at 1500 m elevation. A cross of Pacas and Maragogype, the Pacamara cherries are carefully picked and sorted for ripe red fruit, then slowly and evenly dried on raised beds, yielding bright, distinct fruit flavours with almost no ferment character. The cup is explosive with high acidity, a dense syrupy body, and notes of lemon custard, rose hip and pineapple.
