In Quiet Hopes Of Absolution
Summary
Single origin Guatemalan coffee from Finca Calahute, grown above San Pedro Necta in Huehuetenango at 1,300-1,500 MASL. Produced by Alfonso Anzueto, third generation of the Anzueto family, who have farmed the land since the 1950s. The Maragogype plot is one of the oldest on the farm, planted from seed brought out of El Salvador; Maragogype is a rare Typica mutation known for oversized beans and a defined, weight-driven cup. Fully washed: hand sorted, pulped, fermented 24-36 hours, washed, graded in channels and dried on patio for 7-12 days. Notes of pecan, manuka honey and baked apple.
