This coffee comes from Finca Monteblanco, owned by third-generation farmer Rodrigo Sanchez Valencia, in Huila, Acevedo, Colombia. The Pink Bourbon variety is processed using a unique 'cold washed' method: selectively handpicked cherries are fermented in sealed GrainPro bags in an industrial fridge at 10-14°C for 76 hours, then washed and dried on parabolic beds. The cup is super floral and fresh, with notes of lemongrass and floral, like a sweet and floral lemonade.
