Kerehaklu Estate is located in Chikmagalur, southern India, run by father and son Ajoy and Pranoy Thipaiah. The 97-hectare farm is surrounded by dense jungle and native biodiversity, with tall Liberica and Excelsa trees. This lot uses a fermentation starter culture developed from coffee mucilage and parchment coffee, rich in native yeasts and bacteria. Cherries are fermented overnight before pulping, then fermented with the starter culture for 35-37 hours, washed, and slowly dried under shade then in a polyhouse. The coffee reflects the terroir and varieties of India with clarity and complexity. Flavour notes include chocolate, caramel, raisins, and dates.
