A Panama Geisha coffee from Finca Ponderosa Coffee Estate, located in Cordillera, Chiriqui, Panama. Produced by Gilberto Cardoze and Edgar Gutierrez with operational guidance from Ratibor Hartmann. The coffee underwent a submerged fermentation process (80 hours in water) followed by 28 days of dark-room drying (DRD). Tasting notes include jasmine, mango, raspberry, peach, and earl grey. Grown at 1,400–1,700 masl.

Grind: 700-800 µm
- 0:00Pour 40 ml in a circular manner and let it bloom until 30-40 seconds. (30 s)
- 2.Pour 100 ml more in a circular manner, until 140 ml, by 1 minute and 10 seconds.
- 3.Pour the next 100 ml in gentle circles to make 240 ml within 2 minutes.
- 4.Allow the coffee to finish dripping, ideally by 2 minutes and 30 seconds.
Pre-wet the paper filter before starting. Adjust grind size if drainage is too fast or too slow.
