This Ethiopian coffee from Elto Coffee, run by Sidama Bensa-based couple Eliyas Dukamo and Atiklit Dejene, is sourced from the Elora Washing Station in Arbegona & Bona Village. The coffee is of the 74158 variety, grown at 2,400 masl, and processed using the River Flow Honey CF5 method — an experimental technique where cherries undergo anaerobic fermentation submerged in running water. The cup profile offers notes of ginger ale, white grapes, jasmine, and honey.

Grind: about 700 to 800 microns
- 1.Pour 40 ml in a circular manner.
- 2.Let the coffee bloom until 30-40 seconds. (30 s)
- 1:10Pour 70 ml more in a circular manner until total is 110 ml.
- 2:00Pour the next 70 ml in circles until total is 180 ml.
- 5.For the last pour, focus at the center until total is 225 ml.
Water temperature 90-93°C. Pre-wet paper filter before use. If draining is faster than 2:30 or slower than 3:00, adjust grind size.
