This Ethiopian coffee comes from the Daye Bensa region in Sidama, produced by Asefa Dukamo and smallholder farmers of Hamasho Village. The variety is 74158, a JARC variety, grown at 2,230-2,300 masl. Processed using the Cold Ferment Hybrid Washed method. Flavour notes include starfruit, peach, lychee, guava, and lemongrass. Suitable for both filter and espresso brewing.

Grind: 600 to 700 microns
- 0:00Pour 40 ml in a circular manner, then let the coffee bloom. (30 s)
- 1:10Continuing in a circular manner, pour 70 ml more, until the total is 110 ml.
- 2:00Still in circles, pour the next 70 ml to make 180 ml.
- 4.For the last pour, focus at the center until the total is 225 ml.
If water drains slower than 2:40-3:20, adjust grind size.
