Summary
A washed Geisha coffee from Black Moon Farm, located in Alto Quiel, Boquete, Panama. Produced by Hunter Tedman, the farm uses regenerative agriculture practices. Cherries are pulped within five hours of harvest, undergo 48 hours of controlled fermentation with selected coffee yeasts, and are dried in a Dark Drying Room over 45 days. Flavour notes include coffee flower, bergamot, earlgrey, white grapes, and pear.

Grind: about 700 to 800 microns
- 0:00Pour 40 ml in a circular manner, let the coffee bloom for 30-40 seconds. (30 s)
- 0:30Pour 70 ml more, to 110 ml, by 1 minute 10 seconds. (40 s)
- 1:10Pour 70 ml more to make 180 ml, within 2 minutes. (50 s)
- 4.For the last pour, focus at the center until 225 ml.
Pre-wet the paper filter and dispose of the water. If the water drains slower than 3 minutes or faster than 2 minutes 30 seconds, adjust grind size.
