Summary
Geisha variety from Black Moon Farm, a regenerative agriculture project in Alto Quiel, Boquete, Panama, owned by SCA Panama President Hunter Tedman. Grown at 1,700 masl. Processed using Natural Anaerobic (DRD) method with 48-hour controlled fermentation and 45-day drying in a Dark Drying Room. Flavour notes include lanzones, blueberry, peach, lychee, and rose. Suitable for both filter and espresso brewing.

Grind: about 700 to 800 microns
- 0:00Pour 40 ml of water in a circular manner and let the coffee bloom. (30 s)
- 0:30Pour 70 ml more in a circular manner until reaching 110 ml by 1 minute 10 seconds. (40 s)
- 1:10Pour 70 ml more in a circular manner until reaching 180 ml within 2 minutes. (50 s)
- 2:00For the last pour, focus at the center until the total reaches 225 ml.
If the water drains slower than 3 minutes or faster than 2 minutes 30 seconds, adjust grind size.
