Summary
Honduras Abeja Honey is a single-origin coffee produced and processed by families of the Capucas Cooperative, who diversify their income by keeping bee hives alongside their coffee farms. Ripe cherries are hand-picked by community members, collected at the producers' homes and taken to the cooperative's wet processing plant for pulping and drying. The coffee is dried for 15 to 22 days depending on the weather, with regular raking to ensure even drying and prevent accidental fermentation. The cooperative promotes honey production among its associates to support economic stability.
