Summary
This exceptional microlot from the Quindío region of Colombia is produced by Jairo Arcila, an innovative producer. The Castillo variety undergoes a 24-hour anaerobic dry fermentation, followed by drying on raised beds to 18% moisture, a 50-hour rest in GrainPro bags, and final drying to 10.5%. It is then aged for 20 days in rum barrels, imparting deep, liqueur-like aromas. The cup is rich, complex, and sweet, with notes of tiramisu, cherry liqueur, vanilla, lychee, and nectarine, supported by a rum-like aromatic bouquet. Suitable for both filter and espresso extraction.
