Summary
A rare microlot from Granja Paraiso 92, the farm of Wilton Benitez in Cauca, Colombia. This Chiroso variety was grown at 1950 meters and processed with controlled anaerobic fermentation using SafLager S-23 yeast, after a rigorous sterilization protocol and hot water immersion. The cup is intensely complex with notes of nectarine, apricot, strawberry, hibiscus, lychee liqueur, coriander, white pepper, cardamom, and mint. Silky body, balanced structure, and a long fresh finish. Scored 93.75 points.
