El Salvador Santa Ana

Summary

A sweet, full-bodied coffee from the high slopes of Santa Ana, El Salvador, grown by the Salaverria family at Finca Los Nogales, one of their most important farms. This lot comes from Miramar, the highest point on the farm, where slow cherry ripening builds sweetness and complexity. After harvesting, the coffee undergoes a 96-hour anaerobic fermentation followed by a second soaking stage, developing body, sweetness and clarity. Variety HSF, grown at 1,300-1,800 masl. Expect juicy tropical fruit, syrupy sweetness and a clean citrus finish with notes of honey, mango and orange peel.
