Los Luchadores
Summary
Los Luchadores, meaning Prized Fighters, is a Pacamara from the Salaverria family (JASAL) in El Salvador, grown at 1400-1600 m.a.s.l. on Finca San Francisco and El Molino. Cherries are processed at Beneficio Los Cruces with a natural anaerobic fermentation, then soaked Kenyan style for 10 hours, repeated in clean water for clarity. Light roast with a boozy, syrupy profile of purple grape, white chocolate and rum-soaked raisin. Best for filter, Aeropress and cafetiere.
