Summary
Shantawene Anaerobic is a filter coffee from the Sidama region of Ethiopia, produced by Daye Bensa. Grown at 2000 meters altitude using Mixed Heirloom varietals, the coffee undergoes an anaerobic processing method where ripe cherries are sealed in air-tight containers for 72 hours, then dried on raised African beds. The cup profile features intense sweetness with notes of pineapple, strawberry candy, passion fruit, banana, berries, and stone fruit, with a winey depth and ripe, fruity acidity.
