
El Vergel Gesha
Summary
A specialty Gesha coffee from the El Vergel farm in Tolima, Colombia, produced by brothers Elias and Shady Bayter. Grown at 1500 meters altitude, this coffee undergoes a Natural Koji fermentation process where Koji fungus is added to the coffee cherries to aid fermentation, enhancing sweetness and fruity qualities. The cup profile features intense ripe mango, syrupy cherry, peach, black tea, and floral rose notes, with a silky texture and sparkling acidity. Cultivated on the slopes of the Nevado del Ruiz volcano, the farm benefits from a unique microclimate.
